Easy Sweet and Sour Pork

Sweet and Sour Pork

All I can say about this dish is YUM! An oldie but goodie, for sure. I've been making this dish for over 20 years. There's nothing in it that can't be found at any grocery store, no matter where you are!I have absolutely no recollection of where I found this recipe. I wrote it in one of my cookbooks on an empty page. Now, it's one of the dirtiest pages in the book.

You will need:

1 pound pork (chops or loin; whatever's on sale), cut into bite-sized chunks
3 Tablespoons olive or vegetable oil
Salt and Pepper to taste
1 cup reconstituted beef boullion (or pork if you can find it)

1 bell pepper, jullienned
1 medium onion, sliced
1 can (15oz.) pineapple chunks, drained reserving 1/2 cup liquid

3 Tablespoons cornstarch
1/4 cup sugar
1/4 cup vinegar
2 teaspoons soy sauce
1/2 cup pineapple liquid

Brown pork in oil in wok or skillet. Add 1 cup boullion, cover and simmer on low heat for 20 minutes, or until tender.

Add bell pepper, onion, and pineapple. Re-cover and continue cooking for 10 minutes.

Meanwhile, mix together the cornstarch, sugar, vinegar, soy sauce, and pineapple liquid. Mix with fork or wire whip until smooth.

Add this mixture to the skillet. Cook and stir until sauce is clear and thickened.

Serve over hot, fluffy rice.

Makes enough for a family of four.

If you change your patterns, the patterns of those around you will change as well. Much in the same way that if the Earth were to shift position, it would affect all the satellites around it, as well as the moon.

So, don't be afraid to shift positions now and again. Just try a new one on for size and see how it fits. You can always change your mind later, you know.
