Special Occasion Sweet Potatoes

This dish is an all-around, hands-down favorite. I've been making it for a very long time. In fact, I get asked to bring this wonderfully yummy side dish by both my Mom and my husband's Mom. Goes great with ham, turkey, or lamb. I call it "Special Occasion" due to the high sugar content. I would recommend only making this when there are lots of people to help you eat it.

You will need:

2 large cans sweet potatoes, drained and mashed
(you can use fresh sweet potatoes as well, just bake and mash)
1/2 cup butter, melted
1 teaspoon vanilla extract
1 cup sugar
2 eggs, slightly beaten
1/3 cup milk
1/2 teaspoon cinnamon

Topping:

1 cup brown sugar
1/2 cup flour
1/2 cup butter, softened
1 cup chopped pecans
cinnamon

Combine sweet potatoes with all other ingredients on first list and place in casserole dish that has been coated with non-stick spray. I typically use a 1 1/2 quart casserole dish.

Blend topping ingredients, except cinnamon, with fork until crumbly. Sprinkle on top of casserole. Sprinkle cinnamon over the top.

Bake uncovered at 350 degrees for 25-30 minutes, or until browned on top.

***Psst...next time, try making this with mashed acorn or butternut squash. Make sure to drain as much of the liquid off as you can after mashing or you'll get a soupy mess!

What I'm trying to say is that whatever drama is going on around you in your life right now is just a symptom of something you still need to deal with. If you change your patterns, the patterns of those around you will change as well. Much in the same way that if the Earth were to shift position, it would affect all the satellites around it, as well as the moon.

So, don't be afraid to shift positions now and again. Just try a new one on for size and see how it fits. You can always change your mind later, you know.
