The Best Homemade Pancakes Ever! Featured

These are my go-to when it comes to pancakes. I found the recipe in an old McCall's set I was given when first married back in 1980. The cookbooks came in a plastic case that allowed me to thumb through to find the category I wanted. There were no internet searches at that time, so most of my recipes came from books and magazines. The others came from friends and family.

This is the best recipe (and the easiest) that I found for homemade pancakes. I changed it in order to use my blender. It's so much easier to just pour the batter from there onto the griddle.

Pineapple Spoon Bread

And now for your culinary pleasure, may I tempt you with some yummy and easy to make Pineapple Spoon Bread? What is spoon bread? It is a dish made from bread and served with a spoon like a casserole.

You will need:

1 stick (1/2 cup) butter
1/2 cup sugar
4 eggs
Pinch salt
1 can crushed pineapple, drained (regular sized can, not the short one)
7 slices bread, cubed

Cream butter, add sugar and mix well.

Add eggs and mix well again.

Add salt, pineapple and bread; toss to coat.

Pour into buttered dish and bake at 350° for 45 minutes.
