You will need:
1 pound pork (chops or loin; whatever's on sale), cut into bite-sized chunks
3 Tablespoons olive or vegetable oil
Salt and Pepper to taste
1 cup reconstituted beef boullion (or pork if you can find it)
1 bell pepper, jullienned
1 medium onion, sliced
1 can (15oz.) pineapple chunks, drained reserving 1/2 cup liquid
3 Tablespoons cornstarch
1/4 cup sugar
1/4 cup vinegar
2 teaspoons soy sauce
1/2 cup pineapple liquid
Brown pork in oil in wok or skillet. Add 1 cup boullion, cover and simmer on low heat for 20 minutes, or until tender.
Add bell pepper, onion, and pineapple. Re-cover and continue cooking for 10 minutes.
Meanwhile, mix together the cornstarch, sugar, vinegar, soy sauce, and pineapple liquid. Mix with fork or wire whip until smooth.
Add this mixture to the skillet. Cook and stir until sauce is clear and thickened.
Serve over hot, fluffy rice.
Makes enough for a family of four.
