Old-Fashioned Homemade Apple Pie

Okay, okay. I cheated. I used pre-made packaged pie crusts. But, hey, they showed up, so I HAD to use them! Plus, it made it so much easier to make this delicious pie. Be careful slicing the apples if you're using a mandolin.
Those blades are sharp!

This is the exact apple pie recipe I used to make 6 pies at a time to send to work with my husband.
They were requested several more times afterward!

At that time, I made my pie crust from scratch. I'll post that recipe soon.

In the meantime, free free to cheat and use pre-packaged. They're so much faster and easier!

 

 

You will need:

Pie crust for 2-crust pie

6-7 cups apples, sliced thinly (about 5 pounds)
1 Tablespoon lemon juice

1/2 cup sugar
1/2 cup brown sugar
3 Tablespoons flour
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg

1 Tablespoon butter

1 egg white, beaten
sugar for sprinkling

Peel, core, and thinly slice apples. Toss with lemon juice and set aside.

Preheat oven to 400 degrees.

Mix dry ingredients in mixing bowl until no large lumps remain. Set aside.

Pat bottom crust into pie pan, being careful not to stretch too much. (it will shrink alot when it bakes if stretched)

Toss apples with dry mixture until well coated. Pour into crust, pressing down and mounding high in the middle. Dot with butter.

Place top crust onto lightly floured surface. Cut into strips. Alternately place strips on top of apples, weaving them together to make a nice pattern. Press edges together with bottom crust.

Place pie in oven and bake for 15 minutes. Reduce oven temperature to 375, and continue baking for 35 minutes.

Remove pie from oven. Brush crust with beaten egg white, sprinkle with sugar. Return to oven and bake an additional 10 minutes, or until brown and bubbly.

Let pie cool on rack for at least 1 hour. The pie will "firm up", making slicing easier.

Enjoy! And don't forget the vanilla ice cream!

Much in the same way that if the Earth were to shift position, it would affect all the satellites around it, as well as the moon.

So, don't be afraid to shift positions now and again. Just try a new one on for size and see how it fits. You can always change your mind later, you know.
